Abstract

In order to establish the methodology for determinatíon of bixin in annatto seeds, a Group of Study was formed. Two kind of analysis were selected: one using chloroform, which gives bixin, and other using KOH, which gives norbixin. The best method were chloroforrn to extract the pigment. In order to compare the level of the bixin found by extraction with KOH to the level obtained by the other method, it is necessary to use correction factor of 1,1601.
