Abstract

Fumonisins are mycotoxins produced by Fusarium spp. and occur in com used for food and in com-based animal feeds. They have been shown to cause equine leukoencephalomalacia (ELEM), porcine pulmonary edema (PPE). and liver cancer in rats. epidemiologycal data from South Africa and China have associated fumonisins with esophageal cancer. The present paper reviews the analytical methodology currently described in the literature for the determination of fumonisins in foods and feeds.
