Abstract
The presence of erucic acid in prepared mustar ds and in mustard seed oil was studied since this acid is toxie aceording to animal experimentation. Gas-Iíquid chromatography was employed to obtain a chromatographic profile of mustard seed oil and to detect frauds in prepared mustards, The following material was analysed: 15 samples of mustard seed oil extracted in the laboratory; 22 samples of Brazilian prepared mustard and 11 samples of European prepared mustard. The fatty acids identified and determined were: palmitic, palmitoleic, stearic, oleie, linoleic, linolenic, gadoleic, behenic and erucic acids. Erucic acid
was the fatty acid found in higher arnoun t (from 15.6 to 38.0o/r) related to the total fatty acids in mustard samp les.
