Abstract

The aim of this work was to perform the identification, quantification, and investigation of the incidence of fungi in corn grain samples submitted to two different conditions (with or without control of temperature and of aeration) for a period of five months. Occurrence of mycotoxins (aflatoxins and zearalenone) was also studied. The following fungi were isolated and identified: Aspergillus flavus, Fusarium roseum, Fusarium moniliforme, Fusarium graminearum, and Penicillium sp. The fungi A. flavus, F. roseum, and Penicillium sp presented variation in growing on the grains of 30 - 98 %, 3 - 30 %, and 34 - 90 %, respectively; and the a highest fungus growth was verified in corn grain samples without environment control. The difference verified in observe on fungi growth could not attributed to grain humidity, since the moisture analysis revealed a content inferior to 12 % in both samples. The factors that mostly influenced on the growth might be the temperature associated with aeration, since the grains stored in both silos were harvested at the same period of the year at the same region, thus they were submitted to the same environmental conditions. The mycotoxin detected in silo A (aflatoxin B1) was already present in grain before being stored, and the aflatoxin concentration was at same levels until the end of storage period.
