Abstract

The author reports the following analyses performed on 12 species of fish commonly available in the city of Santos, in the State of São Paulo: edible part - about 50%; water – variable; fat – variable; ash - about 1%; protein - about 20%. The relation between the fat content and the season of the year was not found; this was certainly due to the extremely heterogeneous samples.
