Abstract
Vitamin A deficiency may cause night blindness, development and growth retardation, atrophy of eye
tissues and of skin epithelial cells. On the other hand, the excess of vitamin A may produce toxicity
symptoms In the developed countries the supplementation of foods with vitamins and minerals has been
a usual practice to avoid the deficit of these nutrients. The aim of the present investigation was to evaluate
the vitamin A concentrations in milk samples sold in São Paulo city, SP-Brazil , and to verify whether the
obtained results were in accordance with the values described in the label of respective products container.
Vitamin A was analyzed in milk samples by means spectrophotometry method. Of 676 analyzed samples,
3% (20 samples) had vitamin A concentration in below level comparing to the value indicated in the label.,
48% (325 samples) were in accordance with, and 49% (331 samples) presented higher level.
