Abstract

Chemical and microscopical analysis of 122 samples of tomato paste, puree and pulp acquired at the market of São Paulo, Brazil were made with the aim to verify if they are in accordance with the Brazilian legislation. It was found that 67,7% of the tomato paste samples and 100% of the tomato puree samples agreed with the chemical pattern. The microscopical analysis disclosed that 48,4% of the tomato paste samples and 46,7% of the tomato puree samples disagreed with the amount of mycelia counts by the Howard method permitted by the Brazilian legislation. If the same patterns for tomato puree were applyed for tomato pulp, 60% of the samples disagreed with the chemical pattern and 33,3% of the samples disagreed with the limit of mycelia counts by Howard method permitted by the legislation. The histological identification of the products vegetable components revealed that the puree and the pulp had tomato epicarp and seeds, besides extraneous material such as sand, nematodes, yeast and spores.
