Abstract
The main objetive of this work was to verify the iodine contents stability in ground and refined salt during a two years shelf life under normal storage conditions. Nineteen samples of recent iodized salt were collected and analysed at intervals of three months. Samples were also boiled for two hours in the beginning and at the end ofthe period. The methodology used was the "Normas Analíticas do Instituto Adolfo Lutz". The confirmation of the stability of iodine contents in the salt became a must not only because it was necessary to fix a validity period for iodized salt but also because the addicton of iodine to the salt is the most efficient way to prevent and combat goiter. This work conclusion shows that iodine contents in ground and refined salt is stable for the period of two years in the conditions established.
