Abstract

In this work a method to store green bananas was developed to avoid maturation influeuce in the product quality, The green fruits were maintained betwen 5°C and 7°C, put in polietilen film with a thickness about 85 u, under vaacun during 60 days. The specif object of this experiment was a maintenance of bananas in green and use then to get fried.
