Abstract
85 samples of baby foods such as juices, creams, fruits, puddings and soups, sold at the markets of the city of São Paulo were analysed for their nitrate contento The resuIts show high nitrate levels in products made from spinach, reaching 2,314 mg/kg as sodium nitrate in. a sarnple of spinach cream. The sarnplas
which did not countaín spinach had low levels and in 23,5% of these nitrate could not be detected. The authors recommend that baby food containing spinach should be withdrawn from the market, and that adequate legislation covering those aspects should be elaborated by the authorities.
