Abstract

A dírect specetrophotometric method for detecting sodi um nitrites and nitrates in curing brines is presented. The method is based on Wetter's and Uglum's observations (1970) by which a) there is a ratio between the absorbance rate of sodium nitrite aqueous solution at 355 nm and that at 302 nm, which ís constant and equaI to 2.5; b) sodium nitrate has no absorbance at 355 nm although it has a weIl characterised band at 302 nm. The fact that no interference chlorine ions comes up in these reIations turns out this process very suitabIe for the anaIysis controI of sodium nitrites and nitrates in curing brines.
Thirty known sampIes were anaIysed and the resuIts compared with those obtained through cIassic methods, showing good correIation.
