Abstract

Samples of 173 honeys from the comerce of São Paulo city, were analysed by microscopical and chemical analysis to verify their authenticity and their sanitary condition. The results showed that 12 samples (6,8%) were adultered, because they were cane sugar sirup, 122 samples (70,51 %), were disapproved by microscopical examination, in unsanitary condition, containing insect fragments, dead insects, mold, nematode, mite or by the detection of cane sugar histologic elements or another vegetable not characterized elements; 58 samples (33,5%) were disagreeing with the pattern of Brazilian Legislation.
