Abstract

Although a vertiginous increase in freshwater fish-farming breeding has been occurred in Brazil, there are relatively few studies on fatty acids identification and quantification in fish bred in captivity. It is known that among diverse factors, the fish feeding diet is a determining element on its flesh lipid composition, especially on the composition of nutritionally important fatty acids. The objective of the present study was to reassess some reported studies in order to get an overview on fish fatty acid composition  ,  and on the influence of feeding diet on fatty acid composition of fish caught from natural habitat and those raised in aquaculture. The majority of the studies show that the composition of fatty acids in saltwater fish present higher proportions of polyunsaturated (PUFA- ω 3) Omega 3 fatty acids than freshwater fish. Highest percentages of palmitic and oleic acids are found in both marine and freshwater fishes. For mostly fishes DHA, EPA and linolenic acids are the major sources for PUFA- ω 3 ,  while linoleic and arachidonic acids are the sources for polyunsaturated (PUFA- ω 6) Omega 6 fatty acids.
