Abstract

The work wishes to identify the species Momordica charantia L. through more characteristics histologycal elements of its fruits and leaves, as well as evaluate their vitamin and protein levels. The vegetable was collected in native form, at São João da Boa Vista, in São Paulo, Brazil. It was employed the following equipaments: optical microscop and stereomicroscop and spectrophotometer UV/visible. Leaves and fruits showed levels of vitamin C, vitamin E and beta-caroten in vitamin A that allow their application as alternative alimentary. The leaves have a tector pluricellular hair with wrinkle cuticle and a glandullar hair with three basis cells and four head ones. The cuticle of the epicarp is striated. The mesocarp is rich in starch cells.
