Abstract

Howard method was ernployed for count mycelial filaments in commercial preserves such as 83 sarnples of guava jam, 54 af quince jam, 32 of peach jam and 15 samples of fig pasts. It was found that 31,3% of guava jam had over 50% of fields with mycelia , The quince, peach and fig jam samples were in the accepted limits. It is proposed that the Brazilian Foad Cadex issued by the National Health Council fix limits to the acceptable number of mycelia filaments in fruit jams.
