Abstract

The presence of ferromagnetic particles was searched for in 460 samples of wheat flour. Particles were found in 56.31% of the samples, of which 28.04% contained from 1 to 50 metal filaments; 27.61% of the samples had 1 to ';;0
metal granules; 3.70% from 51 to 100 granules; 1.74% contained 101 to 150 granules; and 6.52% of the samples showed more than 150 granules. In 16.09% of the sarnples, both granules and filaments were detected. The results place in evidence the type of technology employed by mills. Attention is called to the potential pathogenic effect of metal particles for human beings.
