Abstract

Samples of six kinds of fruit preserves (or jams) of quince, guava, peach, banana, pumpkin and sweet-potato were examined for fraud, for adulteration and for sanity. Microscopie examination showed that 115 of the 360 samples were discording with Brazilian legislation: 95 (82,61 %) were adultered with fruits of other kinds and 20 (17,39%) with mycelia filaments. It was detected guar-gum in sweetpotato preserve disagreeing with the legislation.
