Abstract

In January of 2010, ANVISA technicians carried out a sanitary inspection in a ship during the stopover at the port of Santos/SP due to an occurrence of gastroenteritis in the passengers and crew members after a stopover in the region of Buzios in Rio de Janeiro/RJ. They collected samples of the prepared foods: fish soup, mixed salad of pasta, meat soup, chicken soup, pork soup, potatoes salad with mayonnaise, mayonnaise and ketchup dressing and Greek salad, and samples of drink water from five sites. Conventional methodologies were used for analyzing the samples, according to Compendium of Methods for Microbiological Examination of Foods (American Public Health Association, 2001) and by Standard Methods (2005) recommendations. The results were analyzed following the Brazilian Ministry of Health legislation ANVISA RDC 12/2001 and Decree 518/2004. Bacillus cereus was isolated from fish soup meal and coliforms from drink water reservoir tank. The occurrence of these bacteria could be responsible for causing the food borne diseases in the passengers and crew members of the cruise ship.
